Just Like Mother Used to Make – Tom Norrington-Davies

Just like mother used to makeThis is classic British comfort food. Corned beef hash, sticky toffee pudding, cottage pie, macaroni cheese, Welsh rarebit, kedgeree, kippers, toad-in-the-hole and spotted dick with custard. Food your mum cooked, school canteen classics, dishes from the officers’ mess and City dining rooms. Just flicking through the book and reading the recipes makes me feel like I’m twelve years old again and I really ought to be getting on with my maths homework instead. Like The Italian and I, Tom was taught to cook by his mother so that he’d be self-sufficient before leaving home. He’s done pretty well for himself since, running the kitchen at The Eagle pub in London, and writing books.  We like his attitude; it’s not so much a career as indulging his favourite hobby.  And we like his recipes a lot…ooh, Welsh rarebit; I hope The Italian hasn’t eaten all the cheese…
