Chef demos – Giorgio Locatelli of Michelin-starred Locanda Locatelli and regarded by many as the founding father of British Italian gastronomy, Fergus Henderson of ‘nose to tail’ St John, Valentine Warner, Sat Bains, Henry Harris of Racine, Jane Baxter of Riverford Organic Field Kitchen, Channel 4’s very own ‘Willy Wonka’ Willie Carcourt Cooze, Richard Bertinet of Bertinet Kitchen cookery school, Jun Tanaka of Pearl, Tristan Welch, Lucas Hollweg and Richard Kirkwood of J Sheekey.
